Our Story
We started selling Smoothies on a trailer at popular events in Lincolnshire and sometimes a little further afield. We called ourselves Ginger Cow.

After getting rained off in many of them, we headed for indoors and introduced them at Raspberry Heaven, a small gift shop that we opened in Coningsby. We also launched a new Milkshake range and invested in an espresso machine. It became quite popular and we were outgrowing it when the opportunity to open a new shop (now called Ginger Cow Cafe and Bistro) came about.
After careful thought we went for it and that was in August 2014. Slowly year on year it began to grow and now has become the diverse Ginger Cow that you know well.
We now celebrate 10 years of Ginger Cow in Coningsby🍾🍷🎉🎂🎈
We’ve always stuck to our core values of providing good quality food and a high quality and caring service.
We’ve been supported greatly by our local customers and also by BBMF, RAF, Dyson Farming, Tattershall Lakes, Tattershall Castle, Emcor, Holy Trinity Church, Local Schools, NHS, Scania, Boston Police to name but a few.
Without our customers we wouldn’t be here and so we thank you for your loyalty and for your support, we remember those who were lost along the way and we hope to continue serving you in the future!
Our Chef
Diana Connolly is at the heart of Ginger Cow. Diana is a fully qualified chef with a creative, friendly and enthusiastic approach. Her background is with 4 and 5 star Hotels and Restaurants in Manchester and is trained in fine dining, bakery and silver service.

Operations
Peter Connolly stokes the engine and fires the boiler! As well as being the IT man, he does the back office and wholesale runs, buffet ordering and delivery. Peter was 30 years in project management and led major projects such as Oasis Village Penrith (now Centre Parcs) and Victoria & Albert Hotel in Manchester. As he says, “It’s all in the detail!”
